Abstract

In this article an innovative module of milk production and processing on the basis of Sumy National Agrarian University is presented and described in detail. The modes of milk pasteurization and installation by which this process is realized are investigated. The tubular pasteurizer is described and the substantiation of use of this pasteurizer in the innovative module of production and processing of milk is given. The process of making cheese from milk production to direct storage is described in detail.
